Christmas. My favourite time of year (Halloween is a close second), and today I decided it was time to crank the music, bake some cookies, and go skating. Now before you start with the palm to forehead move I should let you know I did wait until after Rememberance day which was real hard. I don’t even have my lights up and it’s snowing out and everything. Im holding back, really.

Some serious stuff though now, those cookies.  Pomegranate white chocolate chunk cookies  which are amazing. Unfortunately cookie cutters dont work very well but they still are good for eating. Just a heads up, we did make a few where we mixed the dough with the pomegranate in them and the came out kind of weird and pink but still deeeelish.

Pomegranate White Chocolate Chunk Cookies

Yield: 2 1/2 dozen cookies

Cook Time: 10-12 minutes

1/2 cup unsalted butter, at room temperature
1/2 cup light brown sugar
1/2 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup old fashioned oats
1 cup white chocolate chunks
1 cup pomegranate arils

1. Preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.

2. In the bowl of a stand mixer, cream butter and sugars together until smooth. Add the egg and vanilla extract and mix until well combined.

3. In a separate bowl whisk together flour, baking powder, baking soda, and salt. Slowly add flour mixture to the wet ingredients. Mix until just incorporated.

4. Stir in the oats and white chocolate chunks. Make dough balls-about 1 tablespoon of dough per cookie. Tuck about 6-8 pomegranate arils in each cookie dough ball. Bake cookies for 10-12 minutes, until the cookies are golden brown. Remove from oven and let cool on baking sheet for two minutes. Transfer to a wire rack to finish cooling.

*Note-you can gently stir in the pomegranate arils, but I didn’t want the cookies to turn pink at all. If you don’t have white chocolate chunks, white chocolate chips will work as well. Enjoy!

It’s Not Just The End Of An Era…

6 Jul

“Welcome! Welcome to the new year at Hogwarts! Before we begin our banquet, I would like to say a few words. And here they are: Nitwit! Blubber! Oddment! Tweak! Thank you!”

At exactly 12:01am on July 15th my purpose to life came to an end. Harry Potter and The Deathly Hallows part 2 came out in theatres. It was so bittersweet to see the end, after 14 years of this amazing adventure it’s hard to believe it’s over.

“It is our choices that show what we truly are, far more than our abilities.”

I remember the day my older sister Lyndsey gave me the book to read and I was litterally spell bound (Oh yeah pun intened) from that day forward. I’m even still waiting for the owl to deliver my letter from Hogwarts. I’m going to miss the count downs, dressing up for midnight showings, waiting in line eagerly for the next book then staying up till the next day reading it, so my heart is kind of broken at the moment. JK Rowling has the ability to take you far away to an amazing place and I don’t know how many times I’ve read and reread every book but they sit on the top on my bookself worn, dogeared but well loved for any day I need a little magic.

“It does not do to dwell on dreams and forget to live, remember that.”

Alright so if you havnt seen the movie yet don’t read past this point it’s my general review and thoughts. First of all thank god for 3d glasses, they hid my tears because honestly I cried. Alot. Which was weird because I didnt expect to cry as much as I did. Tom Felton (Draco Malyfoy) and Matthew Lewis (Neville Longbottom) gave incredible performances even though neither are my favourite character, both really stood out. The special effects BLEW my mind all over the floor and I give the movie a 11.5 million out of ten. Because I could write a book about this I’m just going to do top twos….or three. Or ten. My favourite part was Snape. Honestly it was so heartbreakingly sad, when he was holding Lilys body and how in love he was with her, they did that part perfect. Awesome thing number two, the awkward hug between Voldemort and Malfoy. It was just so great. And just so awkward. Last but not least the entering and escaping of Gringotts was very well planned out except (I’m sorry! I nitpick…) when they touched anything in the vault and then multiplied it didnt burn them, giving it a less urgent feel to get out of there. What I was not impressed with at all was the death of Fred. It was the worst part in the book but so huge and unexpected and they basically just were like here is his body, he’s dead, no big deal. O_____0  Whaaaat?! Then another thing that frusterated me was the fight at Hogwarts. It was more so Harry running around doing nothing when there was so much going on everywhere else. In the book I loved seeing the teachers preparing and fighting but they hardly even did anything thing with that. Other then that the movie was fanfreakingtastic, even the 19 years later wasn’t as corny as I figured it would be  so kudos.

“Of course it is happening inside your head, Harry, but why on earth should that
mean that it is not real?”

I would just like to say thank you to JK Rowling for writing the legendary, fantastic, and imaginative books, you gave me a magical childhood and growing up with Harry Potter was the best way to do so, so thank you.

  “All was well.”

Introducing Me. :))

11 Feb

“If you wanna know
Here it goes
Gonna tell you this
But remember that you asked for it
I’ll try to do my best to impress
At times confusing, slightly amusing
Introducing me…”

You know its going to be a fantastic blog if Im quoting a Jo bro from the start.  : )) So I am Megan Blakeley, AKA MeggieBeee. I enjoy long walks on the beach, bubble baths, and frolicking in the woods with my animal friends. A past time of mine is getting into the back of windowless none descript vans with various promises of puppies and/or candy, depending on the day.

“I eat cheese, but only on pizza, please
And sometimes on a homemade quesadilla
Otherwise it smells like feet to me
And I, I really like it when the moon looks like a toenail
And I love you when you say my name…”

My current job  is at a gas station as a cashier, which basically means a trained monkey could do my job but it’s honestly not a bad job, other then the swarms of misquitos that come around exactly at 8:00. (It looks like I have chicken pox it’s that bad.) I live with my Dad, two older sisters (Lyndsey 24, Lauren 19), and two dogs (Josie and Bella) in Alberta Canada. Or New Brunswick depending on if I have money or not to visit.

“And I like to use to the word  “dude”
As a noun, or an adverb, or an adjective….”

My dreams are making enough money to travel and not be tied down. I want to see everything and visit pretty much everywhere. (Minus Columbia. Cause I would most likely die.). My current goal is going on a working vacation for 9 months in Australia. Me and my best friend Tiffany are planning on going in January but I just want to be there right meow. It will pretty be much like work, ditch the job then travel the country, soaking up sun, scuba diving, surfboarding (though Im super scared of sharkes eating me), sleeping under stars, visiting the outback, getting a pet kangaroo that will be our pet, meeting new people, seeing the Great Barrier Reef, hiking, living in hostels. It sounds amazing, but unfortunately I lack the skill of saving money so its a slow process. Saving up 5 grand should be like no problem right?

“And I’ve never really been into cars
I like really cool guitars and superheroes
And checks with lots of zeros on ’em
I love the sound of violins
And making someone smile…”

Some little facts about me are I love Justin Bieber and would totally give him my v-card. (Akward to post on a blog? Maybe, but so true. Thats me in a nutshell. Blurting out awkward things cause I wasnt born with a filter or something..maybe its a muzzle?) . Florance and The Machine, Adele, Foo Fighters, Cold Wars Kids, Sam Roberts, Snow Patrol, Our Lady Peace are just a few of my favourite bands. I dont believe in god but in science. I suck at math. Hopefully not a vital life skill? Harry Potter is one of the greatest books/series of our time and I highly doubt anything will top it (I swear to god if you say Twilight so help me god…ahahah but I mean look how much work  and planning J.K put into it!  The woman is a genuis. I worship the ground she walks on.) And because of that I named my dog Tonks. After a HP character. Im real cool like that. Also Im 1/64th black no big deal or anything. : D

Anyways that’s all for now folks!

“Well, you probably know more than you ever wanted to
So be careful when you ask next time..”
